Our Step-by-Step Traditional Process

Fresh curd is traditionally hand-churned using a wooden bilona to extract pure butter.
This butter is then slowly simmered on low heat until it turns into rich, aromatic Bilona Desi Ghee. We show you how pure, traditional Desi Ghee is made using the authentic Bilona process, step by step.

1: Boil the Milk

The journey begins with high-quality cow's milk. We bring the fresh milk to a rolling boil to sterilize it and slightly concentrate its richness. This is done carefully, with occasional stirring to prevent it from scorching at the bottom of the pot. Afterward, the milk is allowed to cool to lukewarm, reaching about 35–40°C (95–104°F). This temperature is perfect for the starter culture to thrive without being destroyed by excessive heat.

2: Inoculate & Set Curd

Once the milk has cooled, we introduce a small amount of plain curd as a starter culture. This is mixed in thoroughly. The container is then covered and kept in a warm, undisturbed place for 8 to 10 hours, or overnight. During this time, the beneficial bacteria in the starter multiply, fermenting the milk and transforming it into a thick, wholesome curd. Using an earthen pot can enhance this process by maintaining a consistent temperature.

3: Prepare for Churning

After the curd has set and become firm, it is ready for the next stage. The curd is transferred to a large, clean vessel suitable for churning. If the curd is particularly firm, letting it rest at room temperature for a short while can make the churning process smoother and more effective.

4: Hand-Churn to Separate Butter

Using a traditional wooden churner, the curd is churned with steady, rhythmic movements. This agitation gradually separates the fat solids from the liquid. As the churning continues, lumps of fresh white butter, or makhan, begin to form and float on the surface, separating from the buttermilk, or chaas. This is a patient, manual process that requires skill and time to ensure the butter is of the highest quality.

5: Clarify Butter into Ghee (Slow Cooking)

The collected butter (makhan) is placed into a heavy-bottomed saucepan over a low flame. It melts gently and begins to simmer. As it cooks, foam will form on the surface, and the milk solids will start to separate and sink to the bottom. The key is to maintain a low and slow heat. This allows the water content to evaporate and the milk solids to caramelize, imparting a distinctive nutty aroma and rich flavor. The process is complete when the liquid fat becomes a clear, golden liquid and the solids at the bottom turn a light golden-brown. Finally, the hot ghee is carefully strained through a fine sieve or muslin cloth into clean, dry glass jars, ready to be sealed and delivered.
